Cafe Rio Pork

I took a nap today. I was so tired, that I started nodding off even while holding a wiggling, screaming one year old. He didn’t think we needed a nap – I knew we needed a nap. Luckily, he finally gave in. What I didn’t realize was that my three year old also needed a nap. I put her in timeout for being a stinker, and honestly kind of forgot I put her there (she was actually on the couch right next to me, but being in time out and not being happy about it, she buried herself under pillows). When I woke up after my little siesta, I heard her snoring. I even got to sit awhile longer and just enjoy watching my babies sleep. How could this dreamy afternoon happen, you ask? Where were the other two kids? I’ll tell you…it’s a magical place called “Grandma’s House.” Thanks for keeping my kids entertained today, Mom! I really needed a nap. 🙂

I have to thank my mom for this yummy recipe too! Another great thing about Grandma’s House, is she feeds you. And it always tastes good. If you have never been to Cafe Rio, you’re missing out. But, lucky for you, you can now have it in your own home (or at Grandma’s, if you are really lucky)! And it’s almost as easy as take out. Serve it as a sandwich or over salad (I’ll have to post the crazy-good cilantro dressing you should top it with too!…give me a few weeks, my tomatillos haven’t finished growing yet).

Ingredients:

2 1/2 lbs pork (any cut)

salt, pepper, and garlic salt to taste

1 15 oz can mild green enchilada sauce

1 cup brown sugar

Add salt, pepper, and garlic salt to pork to taste. Cook in crock pot on high for 4 hours, or low for 8 hours, until meat is well done and easily shredded. Drain. Shred meat. Mix together enchilada sauce and brown sugar and pour over meat. Cook until heated through.

Crockpot Spaghetti and Chicken

The Olympics have started! I get seriously sucked into the Olympic Games. I used to only care about the figure skating (still my favorite part…not gonna lie). The rest was uber boring to my teeny-bopper mind – but something clicked awhile back. It was probably 2002 – when the Olympics actually came to my backyard. I gained a greater appreciation for all the sports and now I really love watching every second I can. This also means that I’m watching the Olympics when I should be cooking dinner. Enter Crockpot. Sponsored by the mom’s who don’t feel like doing more than dumping dinner in a pot and letting it magically cook itself.

Ingredients

3 lb. chicken pieces

1 (2/3 oz.) pkg. Italian salad dressing mix

4 tbsp. melted butter

1 small onion, chopped

1 garlic clove, chopped

1 (10 1/2 oz.) can cream of chicken soup

8 oz. cream cheese

1/2 cup chicken broth

1 lb. of spaghetti

Place chicken pieces in crock pot and sprinkle Italian seasoning over chicken. Sprinkle with 2 tbsp. melted butter. Cook on low for 4-6 hours. Melt 2 tbsp. butter in a saucepan and sauté onion and garlic. Add Cream of Chicken Soup, cream cheese, and chicken broth. Stir until smooth. Add this mixture to crockpot and cook on low for an additional hour. Prepare spaghetti according to package directions.

Amish Chicken

Amish Chicken – my husband just asked, “What’s Amish about it?” And the answer is…I have no idea. Someone posted the recipe on Facebook, I thought it looked good and decided to try it. Maybe it’s the same way with the Amish – you see them in their horse and buggy, sporting some pretty sweet beards and say to yourself, “Hey, I should try that.” Yeah. Or maybe they just cook really good chicken.

Ingredients:

6 -8 chicken pieces, cleaned
1 cup flour
2 teaspoons garlic powder
1 tablespoon salt
1 teaspoon pepper
2 teaspoons paprika
1 1/2 cups heavy whipping cream
1 1/2 cups water

Directions:

Dredge the chicken pieces in the flour and spices and arrange skin side up in a baking dish. Mix the cream and water and pour over the chicken. Bake at 350^F for 1 1/2 hours or until the skin is golden brown.

Italian Meatballs

My neighbor got Mono a couple of weeks ago. I had it the summer after my freshman year of college = no fun. And I didn’t have kids to take care of back then – she has 4. So, I made their family dinner, and asked the kids if there was anything they didn’t like or anything they preferred. There was talk of macaroni and cheese and other kinds of kid favorites, but then their eyes lit up; “Spaghetti and Meatballs!” I love spaghetti – my husband does not. So, whenever I make spaghetti, it is a special treat for me. 🙂 However, I usually just make spaghetti with meat sauce. I have never made meatballs. But they asked specifically for meatballs! It’s always a little scary making something you have never made before with the intention of giving it to someone else. It doesn’t leave much room for error – even though you know that they would never say anything if it tasted horrible. I contemplated just doing my regular meat sauce, but then my conscience would strike and I just didn’t have much choice – I promised meatballs.

I was really pleased with this recipe. The meatballs were like miniature meat loaves, and then of course, there is the ease of the crockpot! Even my husband tried them. 🙂 He’s still not a huge fan of spaghetti, but said the meatballs were pretty good – I take what I can.

Ingredients:

1 lb ground beef
1 egg
1/4 cup milk
1/2 cup breadcrumbs
1/2 teaspoon salt
1 teaspoon oregano
1 tablespoon fresh parsley
1/2 teaspoon garlic powder
1/2 teaspoon fresh ground pepper
1/4 cup grated parmesan cheese

Mix all ingredients in a large bowl by hand – use your bare hands for best results. Roll meatballs to about the size of a golf ball. Drop raw meatballs into crockpot filled with Marinara Sauce. Cook on high for about 3 hours.

Italian Crockpot Beef

By far, the best dinner I’ve made in awhile – and that’s saying something because I’ve been using my best recipes lately so I could get them added to the blog! My husband’s work takes them out to lunch every Friday (I made this on a Thurs) and he called after they had had bbq catered: “Your meat was much better.” Score. And it’s crockpot. You just can’t get easier than crockpot. The meat was so-so tender this time around because I didn’t get it in the cooker soon enough – but an hour longer and it would have been fall-apart, melt-in-your-mouth kind of goodness. And the fact that I could completely over look the fact that it didn’t shred as well as I would have liked attests to the fact that the taste is so ridiculously good that it really didn’t matter. Mmmmm…go make it.

Ingredients:

3 lb. beef chuck roast

10.5 oz. beef broth, canned

1 oz. au jus, dry mix packet

.7 oz. dressing mix, dry Italian salad dressing mix

1/2 tsp. salt

1/2 tsp. ground black pepper

Place roast into crock pot and pour the beef broth over the meat. Sprinkle the au jus mix, Italian salad dressing mix, salt, and black pepper over the roast. Cover. Cook for 6-8 hours on low or all day, until meat is very tender. Shred, and place meat on bread of choice (I used Kaiser rolls). Top with Provolone Cheese and place under the broiler for a few minutes to brown cheese.

Salsa Crockpot Chicken

How easy is the crockpot? I really don’t know why I don’t use it more than I do. Dump and leave…awesome. This chicken is pretty self explanatory – it is literally chicken and salsa cooked in a crockpot. And it tastes sooooo good! You can add more stuff to make it more of a meal, or just use the chicken in your taquitos, tacos, breakfast burrito, etc. Either way, you can’t ask for a simpler way to get such a tasty result.

Ingredients:

2 frozen, boneless, skinless chicken breasts

2-3 cups salsa

taco seasoning to taste

*Optional add ins:

1 can corn (I prefer frozen corn – about 1 1/2 cups)

1 can black beans

sour cream

shredded cheddar cheese

diced tomatoes

Place frozen chicken, salsa, and taco seasoning in crockpot, making sure chicken is covered. Cook on low for 6 hours or until chicken is very tender and shreds easily. When chicken is fully cooked, shred and and serve or add corn and sour cream, just enough to make it as creamy as you would like. Cook the black beans separate on the stove top until soft, then add them to the mix. Serve burrito style on a tortilla with shredded cheese and tomatoes.

 

Barbecued Ribs

I was originally going to make these ribs for dinner last Wednesday so I started marinating them that morning (a huge feat for me considering it took me two days to remember I wanted to make ribs in the first place). But then my husband had an early Scouting activity that was going to run late, so I decided to save the ribs and do something simpler for just me and the kids. Thursday rolled around and I thought, “An extra day of marinating! Those ribs will be so flavorful!” Then, I remembered that the gallery featuring my mother-in-law’s art was having its grand opening of the exhibit, which, of course, we wanted to support – so it ended up being fast food on the way home. Day three! I decided no more messing around – into the crock pot, first thing in the morning. We were going to have ribs or bust! Turns out it was a bust. 🙂 I completely forgot about our ward/neighborhood party at the local splash pad. Give your kids the option of playing at the splash pad while they have dinner, or ribs and ten times out of ten I’m pretty sure they’ll go with the splash pad. Baby and I stayed home while the other four headed off for some fun (he voted for naps over splash pad and ribs)…and I had ribs for dinner. And the dog got the bones.

Ingredients:

2 lbs country style pork spareribs

2 quarts water

1 bay leaf

1 onion, quartered

1 (18 oz) bottled prepared barbecue sauce OR 2 cups Homemade BBQ Sauce

1/4 cup brown sugar

1 medium onion, sliced

4 oz mushrooms, sliced

1 medium green pepper, sliced

Trim excess fat from spareribs, then place in 6-quart sauce pan with water, bay leaf, and onion. Simmer over medium heat for 30 minutes. Remove ribs and discard broth. Place ribs back in saucepan with BBQ sauce and brown sugar. Cover and simmer over medium heat for 30 minutes until tender. Add sliced onion and mushrooms and cook for 5 minutes more. Stir in green pepper slices and cook just until crisp-tender.

*I cheat a little…ok a lot…when I make ribs. I don’t always have time to do all the prep, so I marinate in BBQ sauce and throw them in the crock pot on low and let them cook 6 or so hours. They end up fall-off-the-bone tender and are much faster! Also, my husband is not an onion, mushroom, or pepper eater so that’s why there are none in the picture of the dish I prepared. 🙂
