Frosted Zucchini Bars

I will never be a truly successful blogger. Want to know why? Because I get all excited about my blog for about 6 months…then I get lazy. Or busy. Or both. And my poor blog suffers. However! If you stick with me, I promise that I will get to the ever-growing list of recipes. Promise.

Anyone else have zucchini coming out their ears from their over-successful garden? Yeah…me either. We actually have a ton of tomatoes this year (the ironic thing being, I’m the only one in my entire house that eats them) but our zucchini never made it. I think there’s something wrong with us. All of our neighbors got a ton! I’ll trade a few of my tomatoes so I can make these. ūüôā My sister passed this batch along and they look so good!!! (it’s times like these that you curse the fact that your sibling lives clear across the country and you can’t skip over to have a taste)

Ingredients

    • 1 1/4 c. butter, softened
    • 3/4 c. sugar
    • 3/4 c. brown sugar, packed
    • 3 eggs
    • 2 tsp vanilla
    • 2 1/2 c. flour
    • 1 Tbsp baking powder
    • 1 1/2 tsp cinnamon
    • 2 c. zucchini, grated
Frosting
  • 2 c. powdered sugar
  • 1 tsp cinnamon
  • 2 Tbsp butter, melted
  • 1 tsp vanilla
  • 2 Tbsp milk

Instructions

  1. Cream butter and sugars. Add eggs and vanilla. Mix in flour, cinnamon and baking powder. Blend in zucchini.
  2. Pour into greased jelly roll pan. Bake at 350 degrees for 25-30 minutes. Cool.
  3. Prepare frosting. Add more milk if necessary to get right consistency. Spread over cooled bars.

Brown Sugar Asparagus

My run of Les Mis started this past weekend. Opening night had a few bumps, naturally, but it was still a fantastic show. That meant that performance number two could only get better, right? Well, let’s start the morning off with trying to saw through a bagel…and my pinkie. Awesome. Five stitches and a tetanus shot later, my finger was wrapped in so much gauze and tape, I looked like I had sprouted another limb. I asked the doctor if I could take it off for the show (we actors are more than a little vain I suppose – I just could not fathom wearing that monstrosity on stage). He was hesitant, but said it would probably be fine if I just wore a regular bandaid. Hooray! Victory…ish. I took off the bandage just before curtain (I was being good and waited as long as I could), and nearly passed out from the process. I’m a boob. But the stitches got stuck on the gauze, it was all swollen and bruised…and I couldn’t even get the dumb bandaid to stay on right. In short, I ended up rewrapping the darn thing. I did cut the size down by about half, so it wasn’t so in-your-face-I-almost-amputated-my-finger kind of bandage. My mom could tell I had it on (she was looking for it because she told me I was crazy for only wanting to wear a bandaid – mom’s are always right), but my neighbor came and said she couldn’t see it from the audience. I’ll take it! Because I have to wear it for the entire run of the show. ūüė¶ The good news? The show was awesome – none of the glitches from opening night – I figure I absorbed all of the bad luck…and then bled it out all over my kitchen. I’m all about taking one for the team!

Asparagus…you don’t have to use a knife to remove the woody ends (I’m a little wary of knives these days) – just give them a good bend, and they snap off themselves. Don’t skip this step in attempts to avoid wasting a perfectly good spear of asparagus (I have never done this…ever). It tastes bad and it’s impossible to chew, so you’ll end up throwing it away anyways. This is my favorite way to prepare the good ends though! A perfect combination of sweet and salty, and oh-so-tasty!

Ingredients:

1 lb asparagus spears

2 Tbsp butter

2 Tbsp firmly packed brown sugar

3/4 cup chicken broth

Snap off woody ends of asparagus and discard. Heat butter in a large skillet over medium-high heat until melted. Stir in brown sugar. Cook, stirring continually until sugar dissolves. Add asparagus to brown sugar mixture, turning to coat. Saute for 2 min. Add the chicken broth to the skillet. Bring to a boil; reduce heat. Simmer, covered, until asparagus are crisp-tender.

Honey Mustard Irish Chicken

We celebrated Pioneer Day today. It started out a little rocky – our AC went out yesterday. Not very convenient timing, considering we are in the hottest months of summer, and I’m not one who emulates the long-suffering of those celebrated Pioneers…when I’m hot, I’m cranky. So, instead of waiting, we called the 24 hour guys and paid a little extra for the inconvenience. Huzzah.

We closed the doors on our house as the repaired AC worked over time to cool things off, and set up some lawn chairs to enjoy the fireworks being set off in our neighborhood. The night cooled off nicely, and my irritation of the day began to fade. And then, I heard my little five year old. “Oh…aren’t they beautiful?” I almost cried…isn’t that silly? But it wasn’t, “Wow, cool.” or “Awesome!” That specific word, “beautiful,” just got to me. I had been missing most of the beauty in my day because I was so focused on being grumpy. And then, to push my blubbering over the edge, my three year old looked into the sky and sighed. “Mom! A star. I love this night.” Big, colorful explosions or a small, single star – kids find beauty. This is why God makes us parents – so we don’t forget to look around every now and again, regardless if we’re hot. ūüôā

Because I have AC again, I can actually use my stove without worrying about creating a heat wave. I love when you can make dinner in a single pan! That is beautiful to me.

Ingredients
1/4 cup honey
1 tablespoon coarse-ground mustard
1/2 tablespoon salt
1/4 teaspoon pepper
2 tablespoons butter, divided
1 lb chicken breasts
1 pound (about 8) small red potatoes, quartered
3 carrots, peeled and cut into 3/4-inch chunks
1 onion, cut into 1-inch wedges
Combine honey, mustard, salt and pepper in small bowl; set aside. Melt 1 tablespoon of butter in large skillet over medium-high heat. Add chicken; cook for about 4 minutes on each side until the chicken is lightly browned. Transfer chicken to a plate. Melt remaining 1 tablespoon butter in the same skillet. Add vegetables; cook, stirring occasionally for 6 to 8 minutes, or until lightly browned. Place chicken breasts on top of the vegetables. Pour the honey mixture over the chicken and vegetables. Cover; reduce heat to low and cook, stirring the vegetables once, for about 10 to 12 minutes, or until vegetables are tender and chicken is thoroughly cooked.

Apple Crisp

I am so behind on posting, these days. I’m in a production of Les Miserables this summer, so I’m not cooking new things as frequently (it’s a good thing my kids never get sick of mac and cheese), and when I do, I let them sit forever in my draft box because I can’t manage to upload the picture and write down the recipe in one sitting. So today I’m playing catch up! Hopefully I’ll get to the point that I can post more than one recipe a month. ūüôā

This Apple Crisp is another one from my ‘there’s no way you can mess this up’ recipe collection. I like it because there is a single serving version, as well as a feed-the-crowd version.

Apple Crisp For One:

Filling

1 medium cooking apple

2-3 drops lemon juice

1 Tbsp sugar

1/4 tsp ground cinnamon

Crumb Topping

2 Tbsp flour

2 Tbsp rolled oats

2 Tbsp brown sugar

dash of cinnamon

1 Tbsp softened butter

Peel and core apple and cut into 1/4″ slices. Place in 4″ round casserole dish. Sprinkle with lemon juice. Combine sugar and cinnamon in small bowl. Add to apples and toss to coat. Combine dry ingredients for crumb topping. Cut in butter with a fork until the mixture is crumbly.

Method 1:

Cover prepared filling (no topping) loosely with plastic wrap and microwave on high for 2 minutes. Stir gently, then sprinkle with crumb topping mixture and bake, uncovered, at 375^F for 15-20 minutes.

Method 2:

Sprinkle crumb topping over apple/cinnamon sugar mixture and bake at 375^F for 30-40 minutes.

Apple Crisp for 6-8

Follow directions above for filling, using 6 medium cooking apples, 1 Tbsp lemon juice, 1/4 cup sugar, and 1 tsp cinnamon. Make the crumb topping as directed using 3/4 cup flour, 1 cup rolled oats, 1 cup brown sugar, 1 tsp cinnamon, and 1/2 cup softened butter.

Sprinkle topping over filling and bake at 375^F for 40-45 minutes until apples are tender.

Serve with ice cream.

 

Root Beer Float Cookies

I am ignoring my laundry…for another 5 minutes. If I ignore it much longer, it will most likely explode all over the house.

These cookies are pretty darn awesome. They aren’t crazy-full of root beer flavor, but have that creamy taste of a float. Perfect for a summer treat.

INGREDIENTS

INSTRUCTIONS

  1. Cream butter and sugars together.
  2. Beat in instant vanilla pudding mix well.
  3. Add eggs and root beer concentrate and beat until well incorporated.
  4. Add flour and baking soda and beat until well incorporated.
  5. Stir in white chocolate chips.
  6. Roll into 1″ balls and place on greased cookie sheet.
  7. Bake at 350 degrees F for 8-10 minutes.

Blueberry Banana Bread

My five-year-old asked me today, “Mom, why do we always have to do everything you tell us to do?” This was after I told the kids they couldn’t play until they cleaned up the toy room. I know…worst mom ever! At first I told her, “Because I’m Mom, that’s why.” But then I decided to provide some enlightenment. I asked her if she knew what I did all day. “I cook for you, I clean up your messes, I do your laundry, I drive you places, I buy you fun prizes sometimes at the store, I take you to the library and the playground, I sit outside with you while you ride bikes, I let you play with friends while I do the dishes, I vacuum, I scrub toilets, I take care of you when you are sick…” We came up with a ¬†pretty good list. And then I said, “Sometimes, I figure the least you can do is do what I say.” She gave me a pretty awesome pout, but decided not to argue. And someday, she’s going to call me on the phone and say, “Mom, guess what my five year old said to me today?” And I’m going to smile and say, “Serves you right. Love you!” ūüôā

Blueberries and banana bread; they go together like kids and questions. Only the bread will always turn out great, even if the answers to your kids questions could use some work. ūüėČ

Ingredients:

1 3/4 cups flour

1 tsp baking powder

1/8 tsp baking soda

1/4 tsp salt

1/2 cup butter, at room temperature

1 cup sugar

2 eggs

1/4 cup buttermilk

1/2 tsp vanilla

3 ripe bananas, mashed

1 cup blueberries

Preheat oven to 350^F. Lightly coat five 3/4-inch mini loaf pans with non-stick spray.

In a large bowl, combine flour, baking powder, baking soda, and salt Рset aside. Beat butter and sugar together until light and fluffy. Beat in eggs, buttermilk, and vanilla until well combined. Beat in bananas until well combined. Gradually add flour mixture to sugar mixture, beating just until incorporated. Add blueberries, and gently toss to combine.

Scoop the batter evenly into prepared loaf pans. Bake for 30-35 minutes, or until center tester comes out clean.

Chocolate Chip Cookies

I’ve had a terrible hankering for chocolate chip cookies lately. I love the recipe on the back of the Tollhouse Chocolate Chips, but they turn into hockey pucks if you don’t eat them quickly. I made these cookies 4 or 5 days ago, and they are still soft! Hooray!!! My kind of cookie.photo 2

 

Ingredients

2 cups minus 2 tablespoons (8 1/2 ounces) cake flour

1 2/3 cups (8 1/2 ounces) bread flour

1 1/4 tsp baking soda

1 1/2 tsp baking powder

1 1/2 tsp salt

2 1/2 sticks (1 1/4 cups)  butter

1 1/4 cups (10 ounces) brown sugar

1 cup plus 2 tablespoons (8 ounces) granulated sugar

2 large eggs

2 tsp vanilla

1 1/4 pounds chocolate chips

Instructions

Sift flours, baking soda, baking powder and salt¬†into a bowl and set aside.¬†Using a mixer with a paddle attachment, cream¬†butter and sugars until light and fluffy ‚Äď about 5 minutes. Add eggs. Stir in vanilla. Reduce to low speed and add dry ingredients slowly,¬†mixing until just combined. Fold in chocolate chips. Refrigerate dough for¬†24-36 hours.¬†When ready to bake, preheat oven to 350.¬†Drop spoonfuls of dough¬†onto baking sheet. Bake for 10-12 minutes.

*I didn’t have cake flour, so I just used all purpose flour – you can substitute the bread flour for all purpose as well, but it does help the cookies stay soft longer. I also did not refrigerate the dough for 24 hours. I only put it in for about 1/2 hour, and they still turned out great.

Butterbeer

I spent five days down in the sun-filled state of Florida with my sister’s family. I made dinner one night. My sweet nieces are obsessed with Harry Potter and told me in so many words that I really must – absolutely must – go to Harry Potter Land at Universal Studios. Someday I would love¬†to do that, but it just wasn’t in the cards for this trip. Sigh. So! Not to be discouraged I decided to bring Harry Potter Land to us! The Three Broomsticks would be proud. Now, I made a version of Butterbeer a year or so ago that was hot and very butterscotchy. Not bad, but so sweet that I could only manage a sip. This one is a soda version and I like it much better. My nieces and nephews also gave it a thumbs up and confirmed that it tastes just like the stuff at Harry Potter Land. You use imitation butter extract – something that I didn’t even knew existed, but can actually be easily found right by all your other extracts in the seasonings section at your local grocer. Go figure.

Ingredients:

FOR THE BUTTERBEER
chilled cream soda
imitation butter extract

FOR THE FOAM
2 cups heavy cream
6 tablespoons sugar, or splenda for sugar free version
2 teaspoons vanilla extract
1 1/2 teaspoons imitation butter (if using clarified butter, double the amount to 3 teaspoons, or 1 tablespoon)

To make the butterbeer: Place 1/2 teaspoon of imitation butter in glasses. Pour 12 ounces of cream soda into each glass, over the butter. Lightly stir.
To make the foam: In a large bowl, or the bowl of a standing mixer, whip the heavy cream on medium high speed for 3-4 minutes until it starts to thicken. Add the sugar and continue whipping until very soft peaks begin to form, another 3-4 minutes (if you need to whip more or less, then be sure to do so, the times can vary quite a bit based on environment). Stir in the vanilla and imitation butter, then whip for another 30 seconds or so, until soft peaks form.

Spoon a generous portion of foam on top of each glass of butterbeer, mixing gently, if desired (or spoon the foam into the bottom of the glass and pour the butterbeer over the top). Serve immediately.

Sweet Corn Puffs

Remember me? It’s ok‚ĶI don’t either. I’ve been MIA for the last little bit – hubby sent me on an awesome, sun-filled visit to FL to spend time with my sister and her family. The 7 hour flight down there, by myself, baby in tow, was even worth it. ūüôā He actually flew very well, but I’ve learned something about planes now that the novelty of flying from my youth has worn off‚Ķthere is no privacy in planes. The only respite is in the bathroom. I was almost grateful to make my neighbor move three times (yes‚ĶI was in a middle seat! yikes) with the excuse to go feed the baby or change him. But I’d do it again. Next time I think I’ll bring my husband with me though. ūüėČ

Following my return, I had a special presentation to do in my daughter’s school class, and then a company Christmas party to go to the same night. Where I proceeded to get food poisoning. Needless to say, writing about food was not on my list of priorities as I hurled all night and lay limp in bed the entire next day. Lucky for me, my mom loves me‚Ķa lot. She had already spent tons of times at my house taking care of my kiddos while I was away and my husband was at work. And then, the day after I get back‚Ķ”Mom! I’m soooo sick.” She’s an angel. I ate two whole pieces of toast this morning and half a pot pie (the latter only because I’m nursing and I decided that, no matter how much my stomach cramped up, I had to eat something for his sake). I’m still alive, but not quite all the way there.

Recipe for today is the easiest thing alive. My husband calls them the most addicting packaging peanuts around.  photo-186

Ingredients:

8 ounces puffed corn puffs (not the cereal Corn Pops)
1 C butter
3 T water
2 T corn syrup
1 C sugar

In a medium saucepan, melt butter then add water, corn syrup, and sugar. Mix well and cook for 8-10 minutes until the mixture reaches a golden brown color. Pour mixture over corn puffs and stir until evenly coated. Cool. Store in an air-tight container.

Banana Bars

A little less good for you than straight banana bread, and a little too good to be able to eat just one. When our pan got polished off, my four year old cried. Guilt requires me to make another batch…darn.

Ingredients:

Bars-

2 cups sugar

1/2 cup butter

3 eggs

2 cups mashed bananas (3-4 bananas)

1 tsp vanilla

2 cups flour

1 tsp baking soda

pinch of salt

Mix butter and sugar until creamy. Add eggs. Add the rest of the ingredients until well blended. Spread into a greased jelly roll pan (15x10x1). Bake at 350^F for 20-25 min. Cool and frost

Cream Cheese Frosting-

1/2 cup butter, softened

1 8oz pkg cream cheese, softened

4 cups powdered sugar

2 tsp vanilla

Mix all ingredients well and spread over cooled banana bars.
